You are going to love this recipe, a twist on another British classic, I started adding ingredients to it when as a newlywed (to an American with a hearty appetite) I would make the original recipe and my husband would be horrified that I considered a dish without meat to be a meal. Hence, I added bacon and 'another veg' to bulk it out a bit.
1 cauliflower (boiled until almost cooked, TIP; throw in a bay leave and it cuts down on that nasty smell cauliflower puts off when it's cooking)
1 other veg (1 head of cooked broccoli, 15 okra sauted in olive oil or even another cauliflower)
1/2 lb bacon or ham (fully cooked)
1 small white onion or the bulbs of 5 medium green onions)
1 sweet pepper (bell, banana etc)
1/2 cup flour
2 tsp mustard powder or 1T yellow mustard
3 1/2 cup milk
8oz-16oz cheese (depending on how cheesy you like it and how strong the cheese is, mature cheddar you can use less)
Salt and pepper
1T olive oil
1. Heat olive oil in a cast iron skillet, and cook onion ( sliced finely) until almost brown, then add diced pepper and cook for a few minutes.
2. stir in flour and mustard, cooking for 2 minutes continually stirring. Remove from heat and stir in milk until well blended. Return to heat, bring to boil and stir for a couple minutes until thickened.
3. Stir in cheese and melt. Add cooked vegetables (cauliflower and ' other vegetable) along with bacon or ham. Stir gently until vegetables are well coated.
4. Broil for about 3 minutes until the top browns.
