It's Okra Time!!!

I first discovered okra when my husband and I were travelling around the world and a lovely lady made this recipe for us. It has been a family favortie ever since. It is so simple to make and freezes very well.

1 onion diced

1 pinch of salt

1lb okra

1 hot pepper (optional)

1 T lemon juice



Sauté the onion sprinkled with salt for 5 mins, if you have more time feel free to sauté until caramelized (20 mins), this will give extra flavor but if you are in a hurry 5 mins is ok too.

Add the okra and continue to cook for about 10 mins, then add the hot pepper and continue to cook for a further 5 mins.

Splash the lemon juice over the okra stir and serve.
