Nothing says comfort food more than meatloaf!, in fact my youngest child loves it so much that when he was little he called it "meatlove" and it stuck!!
Ingredients;
2Lb ground meat (I like a mixture of beef and pork but sometimes do turkey and beef)
2 eggs
1/2 cup milk (we use our goat milk)
1 cup breadcrumbs (3 slices of bread grated on a box grater)
1/2 cup ketchup
Spice blend;
2t dried mustard
2t paprika
1t salt
1 1/2 t thyme
1 1/2 t dried basil or 2 T fresh basil chopped
1 t black pepper
1t garlic powder
1t onion powder
Directions;
1) Mix spices together in a small bow and set aside
2) In another bowl whisk eggs, add milk breadcrumbs and spice blend and mix
3) combine ground meats then add the milk mixture
4) place in a cast iron loaf pan and top with ketchup
5) bake at 375 for one hour
