As many of you may know we recently relocated from Oklahoma to Ohio. We were so sad to leave Oklahoma but excited to be closer to family. We decided to take our time finding our new home and stay in our RV until we find the perfect place. Magical Chicken Dumplings

This is my daughters favorite thing I make, she says it's her favorite because "it actually tastes good", which is a great compliment coming from my pre-teen!



Ingredients For step 1

1 whole chicken

2 T olive oil

3 whole onions, quartered

3 carrots peeled and cut into large chunks

3 garlic cloves

3 celery stalk

1t salt

1t pepper

1t poultry seasoning

2 bay leaves

1T dried rosemary

4 cups water


Ingredients for step 2

1 quart chicken broth

3 carrots, peeled and diced

1 can corn, drained

2 cups all purpose flour

4 tsp baking...

1 butternut squash, halved

5 green onions (sliced and reserve some of the greens for garnish)

1 clove of garlic, minced

2 T tomato puree

4 tomatoes

1 cup egg plant, cut into 1/2 inch pieces

1 green bell pepper

1/2 cup basil

1/4 cup grated cheese (I used swan bros sharp cheddar)

2 Brats (I used Grassroots ranch green pepper and onion brats)



 Drizzle halved BNS with olive oil and sprinkle with salt, put face down on a rimmed cookie sheet and bake at 380 for 20 mins until soft and "scoopable".  While BNS is baking...



Nothing says comfort food more than meatloaf!, in fact my youngest child loves it so much that when he was little he called it "meatlove" and it stuck!!


2Lb ground meat (I like a mixture of beef and pork but sometimes do turkey and beef)

2 eggs

1/2 cup milk (we use our goat milk)

1 cup breadcrumbs (3 slices of bread grated on a box grater)

1/2 cup ketchup

Spice blend;

2t dried mustard

2t paprika

1t salt

1 1/2 t thyme

1 1/2 t dried basil or 2 T fresh basil chopped

1 t black pepper
